Cut cleaned herring or mackerel fish into thick pieces. Place in a stone jar with 30 peppercorns and a half teaspoon of salt. Add one blade of mace and a bayleaf. Peel one shallot and add to fish. Pour in one gill of vinegar, and tie a brown paper tightly over the top of jar with a string. Put jar, with contents, in a very slow oven to bake 6 hours. The fish is to be eaten cold.
And there were always shellfish—lobster, shrimp, scallops, and clams—to be harvested, too.
